Cassava belongs to the Euphorbiaceae family and originates from South America, diversifying to other parts of the world. It is of great nutritional importance in combating hunger and rural socioeconomic vulnerability, being considered the third largest source of carbohydrates in the tropics, used as food for more than 500 million people. Being a very hardy plant, it is able to adapt to different climates and soils, being very resistant to drought, poor soils, and pests. However, it can only be consumed after cooking, as it contains highly volatile hydrogen cyanide (HCN), whose toxicity is reduced by cooking. The name "mandioca" comes from the Tupi word mãdi'og or mani-oca, meaning "house of Mani," a reference to the Guarani goddess Mani.
